Good morning everyone !

We had an awesome dinner last night ! We always get steak when we go to Killen's so last night we decided to try something new. I got their red snapper with crab meat and DH got their venison chop. They were both wonderful foods but the venison was INCREDIBLE ! I have been eating venison all my life but this was the best I have EVER eaten !! I am posting all the foods from last night on my wall after this blog.

I am going to have to take a short hiatus from my blogs for a while. I don't really want to but it is a must. I will be on her occasionally to see how my friends are doing but other than that I will be taking a short break. I will explain when I get back so till then keep on tracking and doing your best here.

Today's picture is my dinner from last night of Red snapper w/ lump crab meat, haricot verts and sauted collards in blueberry sauce. YUMMY !

Good morning everyone !

I got the whole house cleaned yesterday (DH cleaned the bathrooms) ! Today we will be working in the veggie garden. We are going to plant one cause the greenhouse is too small for some of my veggies. So today DH will be tilling up the ground and tomorrow we will be replanting.

Tonight my DH is taking me to Killen's steakhouse for my mother's day dinner. He always takes me out early to celebrate so we can spend mother's day with the kiddo's.

Today's picture is my dinner from last night of 1 serving chicken piccata w/ 1 cup angel hair pasta, tossed salad w/ Wishbone salad spritzer and 5 oz white wine. The picatta turned out perfect and you can find the recipe on foodnetwork.com under "Chicken Piccata with Lemon, Capers and Artichoke Hearts".

I find your daily menus so helpful. I'm new to WW and am inspired by your progress. I noted you drink 4 cups French vanilla coffee for 0 points. Can you tell me what brand and if you put cream or some type of sugar in it? Thank you!

Good morning everyone !

We had a very fun day yesterday ! Since there were so many people here we did a buffet type eating and most people ate outdoors so I left the tablecloth on for the adults that ate indoors.

After dinner I took pictures of the family, unfortunately I had left the chip in the computer from my food picture so I got only the table picture. Can you tell I was tired ! LOL

Today I am using part of a recipe from foodnetwork because I love piccata.

Today's picture is my dinner from last night of 1 pork tamale w/ Cheryl's salsa verde, less than 1/4 cup of refried beans and 1/3 cup Cheryl's Mexican red rice w/ Cheryl's pico de gallo on it.

Morning

Good morning everyone !

A fun but busy day today ! We are having a big Cinco De Mayo party here today.

I got up at 2 this morning to get most of the things ready before church.

Yesterday I got all the tamales ready so the really hard part is out of the way.

We also got to go play with Tripp, Rio and Mia at Chuck-E-Cheese for Mia's 3rd birthday party.

Today's picture is my dinner from last night of a small baked potato w/ 2 tbsp FF sour cream, 1/3 oz cheddar and chives, Cheryl's goat cheese and strawberry salad w/ Cheryl's raspberry honey vinaigrette dressing and 5 oz white wine. I am also showing what I use to make my dressing and my favorite white wine.

Morning

8 cups of coffee later here are the next 3 dozen tamales ready to go into the steamer !

And I am not kidding unfortunately !! I have already drank 8 cups of coffee this morning but it helped me get the next 3 dozen tamales ready and as you can see I have enout meat for at least 4 dozen more.

This mean when I am finished with this little project I will have made appx 11 dozen tamales ALONE and in only 3 days !

Its a very good thing I decided to start this on Thursday or I would have never gotten it done by tomorrow. Tomorrow I plan on making my Mexican rice, refried beans, my pico de gallo and flan to go with the tamales.

The photo is the 3 dozen tamales I just finished rolling and the meat that I will be using to roll the next 4 dozen !

OH MY I AM GETTING TIRED,,,,LOL !

Good morning everyone !

Another busy day yesterday ! I managed to get 4 dozen more tamales made and will finish them up today along with the rest of the salsa verde to go on top of them. I made plenty of room in my freezer for any leftover after the party tomorrow.

Today between the making of tamales we have to go to Chuck-E-Cheese long enough to drop off a birthday present for Mia. We have no intentions of staying long but we will get to see Tripp, Mia and Rio all there for the party. I will take pictures of course ! LOL

Today's picture is my dinner from last night of 1/2 of Luby's fish almodine and a spinach salad w/ blue cheese dressing.

Morning

5.3 oz Dannon Light&Fit vanilla Greek yogurt 2
1/2 cup Honey Nut Cheerios 2
1/4 fresh mango 0

Midday

1 pork tamale (this is what I made and the true PP value) 7

Good morning everyone !

What a day I had yesterday ! I learned that you NEVER make tamales without a lot of people to help you !! DH did help a little with patting the corn husks dry after they had soaked and been drained but making tamales was something I wanted to do myself.

I did eat one yesterday when they came out of the steamer and they are fantastic ! It was a good thing I ate one because it was the ONLY thing I had to eat at that point and it was 4 pm. I was much too busy to eat any food yesterday other than small taste tests on my salsa verde and chili sauces.

We went to sit Tripp from 5 till 5:45 yesterday then went to Luby's for dinner cause I was much to tired to cook any more. By the days end I had over 13,000 steps on my pedometer ! WHAT A DAY !

Today I plan on rolling up the last 8 dozen tamales but I only have to make the masa and roll them so I am hoping only about 4 more hours of work, we shall see.

Today's picture is my dinner from last night which I didn't even eat half of, of Luby's fish almodine w/ tarter sauce, fried okra, a spinach salad w/ blue cheese dressing and a wheat roll. The total as far as I can figure out was 15 PP for 1/2 of the food w/ sauces and dressing and I ate less than that last night.

Cathy called a few minutes ago and asked if I could relieve Tripps nanny at 5 pm so of course I said yes, mainly because I need a major break !

When she found out what I was doing of course she also asked me to bring her a few. SURPRISE ! LOL

The secret to making tamales is :

NEVER, NEVER, EVER DO IT BY YOURSELF ! ! ! ! !

I have been going at this since 3 am this morning and I will admit I need this break.

I have already put 8,327 steps on my pedometer (just in the kitchen) and I am not even half done.

Those that really know me know that the picture I just took of my kitchen is driving me crazy because I don't have the time to stop and clean between things that must get done first.

The photo is a look at the first 5 lbs of pork ready to go into the masa, when I get it ready.

Guess its time to get back into the kitchen but I REALLY NEED HELP ! LOL

My DH made tamales a couple years ago and it is a big ordeal! He is from El Salvador so his are a little different from the more typical Mexican style. He uses banana leaf wraps instead of corn, and includes garbanzo beans, white cheese and an herb called chipilin.

Good morning everyone !

I had a pretty quiet day yesterday ! Just did some shopping in the morning and spent the rest of the day talking, walking and watching movies with my DH. I even found a penny on my walk so I am hoping for a lucky day today !

I will make up for a quiet day today by making about 10 dozen tamales. I already have 10 pounds of pork simmering away and the corn husks will go in a hot water soak in about an hour then I will prepare my chili sauce and salsa verde. So as you can see it will be a busy day so I won't be on here too much.

I have never made tamales before but I have watched a video baout making them and also printed out plenty of instructions. I got the recipe from a friend of mine that makes them every year with her family for Christmas. I have to do these myself so if anyone wants to help come on over, LOL !

Today's picture is my dinner from last night of 4 oz of chicken and a dumpling with some added veggies.

Morning
