Amazing zucchini bread recipe! Seriously!

I found a recipe for a WW zucchini bread. It was 3 points. I doctored it a bit and now it's only 2 points a serving and it seriously rocks. I'm going to rename it
"My Zucchini Bread Is Better Than Your Zucchini Bread"

Recipe is as follows:

Ingredients:

Non-stick Cooking Spray (I prefer the baking kind w/ flour in it)
2 cups whole wheat flour
2/3 cups all purpose flour
1 tsp salt
1 tsp baking soda
1/2 tsp baking powder
1 tbsp cinnamon
1 cup sugar
2 tsp vanilla extract
2/3 cup unsweetened applesauce
15 oz canned pumpkin
2 cups zucchini grated and drained (skin on)
1/2 cup chopped walnuts (you can sub pecans)
1/2 cup dried cranberrys (mmmm craisins) (you can sub raisins)

Directions:

Preheat to 350F. Coat two 8x4 cooking pans with the non-stick spray.

In a large bowl sift together the whole wheat flour, all-purpose flour, salt, baking soda, baking powder and cinnamon.

With an electric mixer in a large bowl, beat together the sugar, vanilla extract, applesauce and pumpkin. When that's mixed beat in the zucchini.

Then slowly add the sifted ingredients to the wet mixture with the electric mixer. Once it's evenly mixed, fold in the nuts and fruit.

Divide the mix between the two pans and bake for about 50-60 minutes. Check with a toothpick.

Cut each loaf into 10 slices. Each slice is 2 points!

    I completely left out the nuts and raisins/cranberries and I got 18 muffins.. 4 pts. each. Very good.

    I agree with ptrkowens. I put this into the WW recipe builder and got 4 points per serving. I left out the walnuts and it was still 3 points per serving.

    I entered this recipe into the recipe builder and came up with a lot more points per serving???

    jenjen I have to agree. Your zucchini bread is a wonderful treat. I am still reeling at the low points. I made 20 muffins and baked them at 350 for 25 minutes. Seems perfect. Thank you soooo much for this great recipe. Who wudda thought Pumpkin in Zucchini Muffins. You go girl!

    Good morning! I made these this morning! I was looking for a zucchini bread so that I could use up some of the zucchinis from our garden. These turned out great! I used currants instead of raisins and made 2 dozen muffins. Next time I'll use non-stick spray on the muffin papers as they stick w/o the oil. Great recipe! My kiddos and I enjoyed them with smoothies that we made. Thanks for sharing!

    OK that sounds awesome. I just made my moms recipe today (but I totally doctored it). Its 1pt per serving but I'm definitely going to try this one next time.
