The greatest granola

I've recently become obsessed with making granola. I know, I know, it's a no-brainer to buy it at the store, but I discovered how ridiculously easy it is to make, and the results taste amazing, are endlessly customizable, and can be quite healthy.

My favorite combo at the moment is very almond-y. Basically, here's how it goes:

In a large bowl, combine 1/4 cup each of maple syrup and honey, 2 Tbsp canola oil, 3 tsp vanilla and 1 tsp almond extract, a dash of salt, and 1/2 cup wheat germ or wheat bran. Add 4 cups quick-cook oats, 1 cup mixed nuts (or whatever nuts you want). Toss to coat. Spread mixture (in a thin even layer) into a baking sheet and bake at 350F degrees for about 15 minutes, or until mixture has desired golden brown color. Remove from oven and let cool in pan without disturbing (this is how you get clumps of granola rather than a finer textured result). Toss in a few handfuls of dried blueberries, cranberries or cherries, if you want, and store in a covered container.

    Thanks for the idea -- store bought granola is so high fat, I never buy it, but I like granola and so does my husband. Sounds easy too.

    I agree! Homemade granola ROCKS! I have been using Ellie Krieger's recipe for Nutty Granola off of FoodNetwork. Hers does not use any oil or honey - just maple syrup but totally delish! Super good on yougurt (frozen or otherwise!) :)

    The homemade granola sounds wonderful but how much can you eat and what is the point count?
