IHOP for me and Swiss Steak

I had breakfast with some friends from out of town at IHOP. I had checked out the menu ahead of time and found that they have an "IHOP For Me" menu, items under 600 calories (can you just imagine how many calories the rest of the stuff is if this is all they have under 600?) Anyway, I love their pancakes and was happy to find them listed in the IHOP For Me section. I did the Two x Two x Two for Me: scrambled egg substitute, two strips of turkey bacon, and two pancakes. I used just a little bit of sugar free syrup on the pancakes. It was a great meal shared with friends.
This is what I like about Weight Watchers, the fact that I can still go to IHOP and fit it into my meal plan. I had a filling four point lunch (sandwich and an apple). Wasn't really hungry in the afternoon and had plenty of points for dinner and my Friday night snacking. I will probably wait awhile before going back, but those two yummy pancakes will last me a long time!
Recipe of the Day: Swiss Steak and Potatoes
1 lb potatoes, peeled, and cut into chunks
1/2 tsp salt and pepper
1 1/2 C. low sodium beef broth
4 T. all-purpose flour
4 (1/4-lb) cube steaks, trimmed
1 (8oz) package sliced mushrooms
Boil potatoes until until tender. Drain liquid reserving about 1/2 Cup. Mash potatoes, add salt, pepper, and liquid.
Mix broth and 2 T. flour. Coat steaks with remaining flour, salt, and pepper. Spray nonstick skillet with nonstick spray and set over high heat. Add steaks and cook 2 minutes per side. Stir in mushroms and broth mix; bring to boil. Cover and cook 20-25 minutes. Uncover and sit until sauce thickens. Serve 1 steak with 1/2 C. potatoes and 6 T gravy.
