Food Find Friday – Fiber One Original Cereal - Haystacks Recipe

How fun is it to use the original Fiber One Bran Cereal? I know it looks like a bunch of sticks, but with the nutritional value being; 60 calories, 1 fat, 14g of fiber for ½ cup – you can’t go wrong.
A couple of my favorite ways to use Fiber One;
1) Mix with WW yogurt (1 pt) for a mid-morning snack. I like all the flavors, but the vanilla is my favorite to mix with Fiber One. This is a GREAT 2 pt snack that keeps me satisfied for several hours.
2) I use Fiber One as “croutons” on my salad – for 1 pt it gives my salad crunch.

Last evening I had the kids over for an “Avatar” showing and I made Haystacks – this recipe has been around WW for a long time – but they are really yummy @ 1 pt per cookie. Here is the basic recipe:
1-1/2 oz chocolate chips (=1/8 cup)
1 Tablespoon of peanut butter
1 cup Fiber one cereal
Microwave the chocolate chips and peanut butter in a bowl for about 2 minutes, stirring every 30 seconds (I found 1-1/2 minutes was enough). Stir until smooth. Add the Fiber One cereal and toss to coat thoroughly.Drop by rounded tsp onto a foil lined baking sheet to make 12 cookies. Refrigerate until firm.Peel them off the foil and store in a baggie in the refrigerator.
2 cookies= 1 point
There are a lot of different variations by using different choc chips – in fact last night I made it really simply by using the Peanut Butter Choc Chips.
