Sauerkraut and Polish Sausage - A Recipe

Here's a great recipe for sauerkraut and polish sausage (kielbasa). I offer this because a one cup serving is 2 points. This recipe makes 14 servings. This is a good source of protein, I think, and there's probably one or two veggie thingy's per serving.
1 Large Onion, chopped
1 Cup Water
2 Tsp Caraway Seeds
1/2 cup parsley snipped and used as garnish (optional)
14-16 oz. Turkey Polska Kielbasa, cut into 1/2 inch slices
2 Medium apples, peeled and quartered
30 oz. Sauerkraut, undrained
1/2 cup sucralose (0 Cal substitute for 1/2 cup brown sugar)
3 Potatoes, medium, sliced into 1/4 inch slice
In large skillet, cook sausage and onion until sausage is no longer pink and onion is tender. Microwave potatoes 5-6 mins on high in covered baking dish. Stir into the skillet: water, potatoes, apples, sauerkraut, sugar (sucralose), and caraway seeds. Then transfer to covered baking dishes (4 quarts, so usually need two covered baking dishes). Bake at 350degrees for 1 hour.
Makes 4 quarts. 14 one cup servings. 2 points per serving.
Top with honey mustard (my favorite) and salt to taste.
Note: My Wife, Cece, found this on the internet and I adjusted it (turkey sausage, sucralose substituted; potatoes added).
