I have been cooking up a storm this week, but I haven't gotten to update my blog. I will get to all of the recipes once I have a few minutes..........but, I just had to rave when I made this one this afternoon.
A very good friend of mine makes a recipe similar to this one, but I don't make it often because it is loaded with the full fat cream cheese, walnuts and sour cream. But, when Gina posted this recipe today.......I couldn't believe my eyes!!! A healthier version!!! Would it taste the same? I had to run out and buy the grapes and Greek yogurt to see. Well, guess what? It is sooooooooooooo yummy!!!!
I did make quite a few changes and will post my recipe below.........but, to give credit where credit is due, here is the link to Gina's recipe: Gina's Creamy Grape Salad Recipe
Now..........Here is my version:
Creamy Grape Dessert
Servings: 15 • Points: 2 pts for each 1/2 cup serving
1 ½ lb green seedless grapes, washed and dried well
1 ½ lb red seedless grapes, washed and dried well
8 oz fat free Greek yogurt
4 oz light cream cheese, softened
1/8 cup Splenda
1 teaspoon vanilla extract
2 tbsp brown sugar, packed
1/2 cup chopped walnuts
Cut grapes in half and set aside in a large bowl.
In a small bowl, mix all other ingredients, except walnuts, until blended well. Pour over top the grapes and add the walnuts. Stir mixture until all the grapes are covered with the yogurt mixture.
Chill until ready to serve.
