Got Zucchini? Get 1 Point Muffins!

I had 2 zucchini in my refrigerator that HAD to be used. Just in time, I got a recipe for Zucchini Muffins in my inbox from another weight loss sight (starts with "Spark").

I made double the recipe because I had 3 cups of zucchini when shredded, and I ended up with 37 really good ONE POINT muffins!

That's right, one.

Here is the "single sized" recipe, with my modifcations:

Easy Zucchini Muffins

INGREDIENTS
1 1/2 c zucchini, grated
1 1/2 c rolled oats (not instant)
1 1/2 c whole wheat flour
2 t baking soda
2 t cream of tartar
1 1/2 t cinnamon
1/4 t nutmeg
1/2 c Splenda brown sugar
1/4 c apple juice
1 t vanilla
3/4 c applesauce, unsweetened
8 oz crushed pineapple, drained
1/2 c egg substitute
1/4 c golden rainins
1/4 c pecans, chopped

DIRECTIONS
Preheat oven to 325 degrees Fahrenheit. Coat 3 muffin pans with nonstick cooking spray or line with paper cups. In a mixing bowl combine oats, flour, baking soda, cream of tartar, spices and walnuts. In a separate bowl combine grated zucchini, brown sugar, applesauce, drained pineapple, raisins, vanilla, and pineapple juice. Stir in egg substitute. Combine the wet mixture with the dry; stir only until combined. Portion out 18 muffins in the prepared tins. Bake for 20 minutes.
Number of Servings: 18

    omg... i've got a bunch of zucchini and yellow squash in my refrigerator. Was going to steam them. This is a heck more fun! Gotta get me some pineapple! I've got the rest, or at least close enough substitutions.

    cont--when i make the mini-meat loaves, i also baked potatoes or muffins in the oven at the same time, if i've got the kitchen hot, might as well do it all at once. i'm going to try your muffins either this week or next, because i love me 1pt muffins : )

    i shred zucchini and make mini meatloaf with 1/2lb ground turkey and an even amt of shredded zuc with 1 med diced tomato, some dices onion, diced garlic, Mrs dash, pepper, ketchup, and at times, any other bean or veg that's leftover in the fridge (this is good for left-over wendy's chili, i get the baja salad and only eat 1/2 the chili). mix it all and put in 8loaf pan. it's 1pt for 1 loaf and 2 pts for each additional loaf. bake at 350 for 1 hr. i top it w/ketchup and mustard

    These sound wonderful...thank you. Still have zucchini?...tonight I made mini pizzas with one point pita breads and included shredded zucchini as a topping.
