I have had several requests for this recipe...so here it is! I would love to take the credit for creating this, but I didn't. :) It's delish AND ridiculously easy... I promise!
DIET COKE CHICKEN!
Things you'll need:
- 2-3 chicken breasts
- 1 cup ketchup
- 12 oz diet coke (1 can or 1&1/2 cups)
- your appetite
- any side dish
1.) Cut chicken into desired size. I like to cute mine into strips.2.) Mix 1 cup ketchup with the 12 oz Diet Coke. Mix well.
3.) Pour mixture and chicken into large sauce pan or skillet (that has a lid)
4.) Bring to a boil, and then reduce heat and simmer covered for about 45 minutes. Turn chicken occasionaly.
5.) For the last 10 minutes or so, removed the lid to let the sauce thicken.
And there you have it... Diet Coke chicken! Tastes like BBQ but without all the calories OR a ton of points. A 4oz piece of chicken with some sauce is only 5 points. I served mine with the WW potato wedges that the recipe was featured yesteday (1/11/11).
