Cream of Broccoli Soup

Several Weight Watchers friends have turned me on to Gina's Skinny Recipes since they contain the Weight Watchers PointsPlus values. You may have seen the recipe for the Cream of Cauliflower Soup that's on this site since some of our members have made it. It's quite a simple recipe.

Since I did not have much cauliflower, I decided to use mostly broccoli for my creamed soup and made of Cream of Broccoli soup. I made half of the Cream of Cauliflower recipe, but I used organic low-sodium fat-free vegetable broth instead of water and chicken stock. I also added a bay leaf, fresh garlic, and fresh thyme. Since I did not have an immersion blender, I used a regular blender after I let the soup simmer for about 20 minutes and took out the bay leaf. I got a beautiful green color, and the soup was very thick and surprisingly rich and flavorful. It tasted like I had added cream and/or milk, but I did not. You could really taste the roasted garlic and pepper I added, and the fresh vegetable broth flavors were delicious. Never thought I could be so satisfied with no points. Hope you enjoy it as well. It's nice to have a filling cream soup be 0 PointsPlus.

    Joanne, you can see the other recipe (using cauliflower) by clicking on the Gina's Skinny Recipes in the hypertext link in blue above. I think that adding the garlic and the fresh thyme added great flavor. Some thought the soup was a bit bland otherwise. I also prefer lower sodium, and bouillion cubes usually have a lot of sodium, so I prefer not to use them.

    I love Cream of Broccoli soup! I'd probably never make it, but I'd like to see the other recipe. I don't know what an immersion blender is. I have a regular one, but never use it.
