Recipe Makeover-So Simple Cole Slaw

This recipe is so easy, and, because you control the amount of mayo, vinegar, salt, etc. it's quite a healthy alternative to commercially-prepared cole slaw. The amount of cabbage makes it very healthy. I'm not a fan of lots of mayo, and when I get cole slaw in a restaurant I always ask the server to have it well-drained.

So Simple Cole Slaw
Serving size-6-8
Points Value-1 per serving

-3 cups packaged coleslaw mix
-1/3 cup light mayonnaise
-2 tsp fresh or dried dill weed
-1 tsp fresh or dried parsley
-1/8 cup red wine vinegar
-2 packets Truvia or Splenda
-Salt and pepper to taste

-Mix all ingredients very well
-Allow to marinate in the refrigerator for a couple of hours before serving

-I like a sweet-salty-sour taste, so I may add a bit more vinegar or sweetener.
-As the cole slaw marinates the cabbage cells are broken down and become easier to digest.

    Thanks for this great recipe! I can't wait to try it. I made cole slaw two nights ago and put a handful of the cabbage into a bowl for me, with a spoonful of the full-dressing slaw for my family. Mixed together, I got the taste of the dressing, but not nearly as much. I'll definitely try this recipe the next time I fix slaw! Thanks!

    Another yummy cabbage slaw is Napa cabbage, shredded very fine (could also add radishes or very fine grated carrot). Dressing of Rice wine vinegar, canola or other "good" oil, and Mirin (an Asian cooking wine). Very yum -o. Then there is French slaw: fine cabbages (red and white), carrots, diakon radish - all done very fine. Dress with EVOO, and Balsamic. Salt and pep. Boom, done. and VERY delish.

    I use 2 tbsp each of sugar, olive oil and basalmic vinegar for a dressing for about the same points. But i do make a pig of myself, rarely does the salad last into the second love love that cabbage.

    Love coleslaw..thanks for reminding me how low in calories and points it is..years ago I went to Weight Trimmers & they always said if your hungry, eat some diet coleslaw..I did a lot of munching back then and it worked!

    Rice wine vinegar and soy sauce really tastes good in coleslaw too! This looks good!

    Sounds great Marcee! My favorite cole slaw is brocolli cranberry slaw! I bag of brocolli slaw, about 1/2 cup of craisings and 1/2 cup of cole slaw mix. The points went up a bit because of the coleslaw mix so I can work on a dressing (maybe steal yours!) that I can substitute, but I love the combination of brocolli slaw with the cranberries!
