Ground Turkey Wellington Recipe

My brother rushed back to my house and wanted to know where he could buy the wellington. It reminded him of what he calls a Cornish Pasty. I had to laugh I made it myself from a Jamie Oliver recipe w/ a few tweaks.
1lb ground turkey (can use flavored like Italian or Taco...I used taco last nite)
1/4 cup chopped bell peppers (red or yellow)
1/4 cup chopped onion
1/4 cup mushrooms chopped
handful of frozen peas w/ carrots
1 stalk celery
3 cloves minced fresh garlic
2 sheets puff pastry
1 slightly beaten egg
1 cup breadcrumbs
Preheat oven on 350 degrees.
Saute all the veggies except the frozen peas & carrots. Throw those in when the onions are transparent. Once done make sure that the veggies full cool off before adding to ground turkey.
Put one puff pastry sheet on top of the other and roll it out to be a nice rectangle single piece.
Add half of the egg to the ground turkey and the veggie mixture. Add breadcrumbs and mix thoroughly. Make the turkey into a nice long fat sausage shape onto the pastry sheet. Brush the edges w/ the egg. Roll up and place on the nonstick sprayed baking sheet w/ seem side down. Brush the rest of the egg onto the outside of the pastry.
Bakes for 30mins to an hour (depends on how your oven runs).
It serves a good 6 servings.
