Kinda freaked out.....over potluck?

Today I was informed that I have to bring a dish to a potluck for our softball league draft. In my pre-WW life, potluck or "covered dish" was NO BIG DEAL. I'd make potato salad or "Better Than Sex" cake. Or maybe I'd make banana or cranberry nut bread, or hash brown casserole if it was a breakfast potluck. Or if it was soup and sandwich day, I'd make my (to die for) Baked Potato Soup (which I have lightened up tremendously from the original version).

But the thought of tomorrow's potluck has put me into a near panic. What the heck am I going to make? I don't have a lot of time to figure this out. What will I make? I haven't baked a cake in a year and I may have baked brownies twice. I have one stick of butter in the freezer and I should probably throw it away at this point, because I don't know how long it's been in there. (I don't use butter anymore, just olive or canola oil).

I have seriously considered a fruit salad because it's easy to make, carry and I can keep it on ice.

If anyone has ANY IDEAS, I would welcome them! Please share!

    I have a potluck coming up -- been kind of freaking out. I signed up for my homemade chili. I have a new crockpot that clamps down on the sides so less chance of spilling. I have also been to potlucks where someone brought a really nice salad with all kinds of veggies and tasty dressing. It was always a hit. I might do that; however, I usually like to bring something with protein.

    we have a potluck on Monday this next week looking for some low point recipies to make to take that is weight watcher friendly. any good ideas

    ThinMint, do you want the original version? We can "tweak" it and help make it WW friendly, but it's a tough one.

    I did very well at the potluck. Most of the food didn't look good (at all). One guy (who has a restaurant) made a pork roast with potatoes, carrots and onions). I took a tiny bit of meat and some veggies (from which I had to blot off the oil). But it was nice to have something other than raw veggies and look stupid not eating anything else. Honestly, it was not a potluck. Just hot dogs, chips, donuts and some very nasty looking macaroni and cheese. I am proud of myself!

    salads are a good idea, but the veggie tray is great! Even before I did WW I would grab lots of raw veggies when at a buffet, hoping I would not eat too much of the other stuff. Good job!

    Dear hubs is making up a large veggie tray (his idea). I bought a bunch of veggies this morning, scrubbed them up and he's choppin' away. What a sweetie! I loved all of your input and I thank all of you so much! I'm going to make note of the suggestions!

    That is a great idea because it's warm so it would be refreshing and not to mention good for you to eat. Go with the fruit salad.

    The only thing I've learned about potlucks since I've started Weight Watchers is that I bring something that I can eat. Good luck.

    Checkout the recipes on this site. They have some great stuff you could probably take and no one know it's a WW recipe. Make the ww potatoes salad, WW Sausage dip, chili party dip, layered mexican chicken, mexican turkey salad platter or take a recipe you have re-done. It will be fine.

    I almost always bring fruit salads to pot lucks now-and they are usually gone pretty quickly because more and more folks are looking for healthy choices.

    Fruit sounds good. Steamed vegeatables. veggie stir-fry. wheat pasta tossed with butter substitute and veggies.
